Pressure Cooker Mexican Albondigas Soup



Enjoy the classic flavors of Mexican albondigas soup in a fraction of the time with this easy pressure cooker recipe. Perfect for a quick and satisfying meal!

Ingredients:

  • 1 lb ground beef
  • 1/2 cup cooked rice
  • 1/4 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped fresh cilantro
  • 1 egg
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 8 cups beef broth
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 cup chopped tomatoes
  • 1/2 cup chopped celery
  • 1/4 cup chopped fresh parsley
  • 1 tsp dried oregano
  • 1/2 tsp ground coriander
  • 1/2 tsp smoked paprika
  • Juice of 1 lime
  • Avocado slices for serving
  • Lime wedges for serving

Instructions:

Boil the rice and put it in a large bowl

Add the breadcrumbs, chopped onion, cilantro, egg, cumin, garlic powder, salt, and pepper

Mix everything together well, then roll it into small meatballs

Put the meatballs in the pressure cooker and set it to saut mode

Brown them on all sides

Get the meatballs out and set them aside

Beef broth, potatoes, tomatoes, celery, parsley, oregano, coriander, smoked paprika, and lime juice should all be put into the pressure cooker

Put the meatballs that have been browned back into the pressure cooker

Put the lid on top and cook for 8 minutes on high pressure

After you're done, let the pressure go away naturally for 5 minutes and then quickly let go of any remaining pressure

Add avocado slices and lime wedges to the top of the hot albondigas soup
