Sweet potatoes and black beans are mixed together with aromatic spices to make this hearty and healthy vegan hash.
Ingredients:
- 2 cups diced sweet potatoes
- 1 can black beans, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish optional
Instructions:
Warm up the olive oil in a big pan over medium-low heat
Cook for 5 to 7 minutes, until the sweet potatoes are just starting to get soft
Put the bell pepper, onion, and garlic in the pan
Cook until the onion is clear
Add the cumin, smoked paprika, salt, and pepper, and mix them in
Stir every now and then for another 5 minutes
Take the dish off the heat when all the ingredients are cooked through and the flavors are mixed
If you want, add fresh cilantro as a garnish
