Vegetable Pulao



A tasty and fragrant rice dish made with a combination of vegetables and spices is called vegetable pulao. This is a well-liked Indian dish that goes well as a side dish or with a hearty meal.

Ingredients:

  • 2 cups basmati rice
  • 4 cups water
  • 2 tablespoons oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger paste
  • 1 green chili, finely chopped
  • 1 carrot, diced
  • 1 potato, diced
  • 1/2 cup green peas
  • 1 teaspoon cumin seeds
  • 2 bay leaves
  • 4 cloves
  • 2 cardamom pods
  • 1 cinnamon stick
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Coriander leaves for garnish

Instructions:

Wash and soak basmati rice in water for 30 minutes

Drain and set aside

In a large pan, heat oil over medium heat

Add cumin seeds, bay leaves, cloves, cardamom pods, and cinnamon stick

Saut for a minute until fragrant

Add sliced onions, minced garlic, ginger paste, and chopped green chili

Saut until onions turn golden brown

Add diced carrots, potatoes, and green peas

Cook for 2-3 minutes

Add soaked rice and saut for another 2 minutes

Pour water into the pan

Add turmeric powder, garam masala, and salt

Stir well

Bring the mixture to a boil, then reduce heat to low

Cover the pan and let it simmer for 15-20 minutes or until the rice is cooked and water is absorbed

Once done, fluff the rice gently with a fork

Garnish with chopped coriander leaves before serving
