A tasty and healthy veggie burger made with quinoa patties mixed with black beans, carrots, and tasty spices. Great for a plant-based meal that fills you up!
Ingredients:
- 1 cup quinoa, cooked
- 1 can black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/2 cup grated carrot
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 whole grain burger buns
- Toppings: lettuce, tomato, avocado slices, vegan mayo
Instructions:
In a large bowl, mash the black beans with a fork or potato masher
Add the cooked quinoa, breadcrumbs, grated carrot, red onion, minced garlic, cumin, paprika, salt, and pepper to the mashed black beans
Mix well until combined
Divide the mixture into 4 portions and shape each portion into a patty
Heat a non-stick skillet over medium heat and cook the quinoa patties for 4-5 minutes per side or until golden brown and cooked through
Toast the burger buns in the skillet or oven
Assemble the burgers by placing a quinoa patty on the bottom half of each bun
Top with lettuce, tomato, avocado slices, and a dollop of vegan mayo
Cover with the top half of the bun
Serve the quinoa veggie burgers warm and enjoy!
