These Grain-Free, Gluten-Free Chocolate Thumbprint Cookies are a delicious treat for those following a gluten-free diet. Made with almond flour and coconut flour, they are rich in flavor and have a delightful chocolatey center.
Ingredients:
- 1 cup almond flour
- 2 tablespoons coconut flour
- 1/4 cup cocoa powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup dairy-free chocolate chips
Instructions:
Preheat oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, combine almond flour, coconut flour, cocoa powder, salt, and baking soda
Stir in melted coconut oil, maple syrup, and vanilla extract until dough forms
Roll dough into 1-inch balls and place onto the prepared baking sheet
Make an indentation in the center of each cookie with your thumb
Bake for 10-12 minutes or until edges are set
Remove from oven and immediately press a few chocolate chips into the center of each cookie
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
