Garlic Butter Chicken and Pasta

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 cups chicken broth
  • 1 pound penne pasta, uncooked
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped, for garnish

Instructions:

Place chicken breasts in the slow cooker

In a small bowl, mix together melted butter, minced garlic, Italian seasoning, salt, and black pepper

Pour butter mixture over chicken

Sprinkle grated Parmesan cheese over the chicken

Pour chicken broth into the slow cooker

Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and tender

About 30 minutes before serving, cook penne pasta according to package instructions until al dente

Drain

Shred chicken directly in the slow cooker using two forks

Stir in cooked pasta and heavy cream until well combined

Sprinkle shredded mozzarella cheese over the top

Cover and cook on high for an additional 20-30 minutes, until cheese is melted and bubbly

Serve hot, garnished with chopped fresh parsley
