Ingredients:
- 3 ripe bananas, peeled and cut in half
- 1 cup dairy-free chocolate chips
- 2 tablespoons coconut oil
- Assorted toppings: shredded coconut, chopped nuts, sprinkles, etc
Instructions:
Insert a popsicle stick into each banana half and place them on a parchment-lined baking sheet
Freeze the bananas for at least 1 hour
In a microwave-safe bowl, combine chocolate chips and coconut oil
Microwave in 30-second intervals, stirring in between, until chocolate is melted and smooth
Dip each frozen banana half into the melted chocolate, letting excess drip off
