Slow Cooker Chicken Marbella



This is a slow cooker version of the classic Chicken Marbella recipe. It has soft chicken thighs marinated in a savory sauce with Spanish olives, capers, and sweet prunes. The chicken is cooked to perfection in the sauce.

Ingredients:

  • 4 lbs chicken thighs, bone-in, skin-on
  • 1 cup pitted Spanish green olives
  • 1/2 cup capers, drained
  • 1/2 cup prunes, pitted and halved
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions:

Brown sugar, minced garlic, oregano, thyme, salt, and black pepper should all be mixed together in a bowl

Cook chicken thighs on low for a long time

Cover the chicken with the olive oil mix

Put prunes, green olives, and capers on top of the chicken

Set the cooker to low for 6 to 8 hours or high for 3 to 4 hours

Remove the lid and cook the chicken until it is soft and fully cooked

Enjoy while hot!
