With this Paleo-friendly recipe, you can benefit from the health benefits of jun tea. A close relative of kombucha, jun tea is made with raw honey and green tea, which makes it ideal for a Paleo diet. It's a beverage that's high in probiotics and can help your gut health.
Ingredients:
- 1 cup green tea
- 1/4 cup raw honey
- 1 Jun tea SCOBY Symbiotic Culture Of Bacteria and Yeast
Instructions:
Boil 4 cups of water and allow it to cool to room temperature
Add the green tea to a clean glass container
Pour the cooled water over the tea leaves and let it steep for 5 minutes
Remove the tea leaves and stir in the raw honey until dissolved
Allow the sweetened tea to cool completely
Place the Jun tea SCOBY into the sweetened tea
Cover the container with a clean cloth or coffee filter secured with a rubber band
Let it ferment at room temperature for 7-10 days, away from direct sunlight
Taste test to check if it has reached your desired level of acidity
Once ready, remove the SCOBY and store it in a bit of the liquid for future batches
Transfer the Jun tea mother culture to bottles and refrigerate to slow down fermentation
