Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/4 cup balsamic vinegar
- 4 slices mozzarella cheese
- Fresh basil leaves for garnish
Instructions:
Preheat oven to 400F 200C
Season chicken breasts with salt and pepper
Heat olive oil in a skillet over medium-high heat
Add minced garlic and cook until fragrant, about 1 minute
Add chicken breasts to the skillet and cook until browned on both sides, about 3-4 minutes per side
Transfer chicken breasts to a baking dish
Top each chicken breast with cherry tomato halves
Drizzle balsamic vinegar over the chicken and tomatoes
Place a slice of mozzarella cheese on top of each chicken breast
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly
